Banana Coconut Ice Cream

I cannot believe that this creamy, rich ice cream has only 2 Ingredients! My dogs devour it and friends who are fussy eaters love it too!

Free from gluten, dairy and vegan, it is an easy and healthy snack to help you and your dog stay cool in summer.


Ingredients

6 large ripe bananas
(buy the spotty ones)

500 ml Coconut Cream
( I use the Aroy-D 100% Coconut Cream available from most Asian supermarkets)

 

Method

1. Cut bananas into 2-3 cm chunks. Store in zip lock bag and freeze overnight.

2. Blend bananas and coconut cream for 1-2 minutes in a powerful blender until the mixture is smooth and silky (like the texture of soft serve ice cream).


The ice cream is delicious when eaten immediately but it will be quite soft.  Transfer to a container and freeze until solid like traditional ice cream (about 6 hours). It freezes well so pop any leftovers back in the freezer.

TIP: Remove from the freezer 10-15 minutes before eating. It helps with the scooping out.
